Here's another super easy Christmas breakfast idea if you're looking for something with a little more spice to it. We took the humble breakfast burrito and kicked it up a notch with some fresh ingredients and of course, Saddleberk pork.
What you'll need (to make 5 burritos):
- Corn or flour tortillas (your choice, we used flour for the texture)
- 1/2 lb Saddleberk Chorizo
- Crumbled queso fresco
- Fresh salsa (you can either throw your favorite recipe together or grab a pre-made version at Kroger)
- 5 eggs
- Lime for zest
How you'll make them:
Here's the best thing about breakfast burritos- they're insanely easy to make! Saddleberk Chorizo is already flavored and has some spice to it, which makes it a great base for everyone. It's not too spicy if you prefer a milder chorizo, but it'll still give you great flavor even if you like it hot! All you need to do is brown up your chorizo and then in the same pan, fry your eggs. Most breakfast burritos tend to use scrambled eggs and that's fine too if you wish, but we simply fried ours up with some salt and pepper. That way you still get the gooey yolk. After that, simply load up some warmed tortillas with all the finished ingredients and enjoy!
For Christmas morning, it would be neat to leave out a buffet of ingredients for the burritos and have everyone make their own. You may wish to include some more spicy flavors to amp it up, chiles, or different salsa varieties. It's all up to you! We can't think of anything easier and more fun for a twist on a traditional breakfast.
